Use all 3 subs.. Build boxes to factory specs.. Try to tune the 12 at around 38hz and the 10s at around 48-52. And then you'll need to do a healthy amount of fiddling with the Xover settings..
But it isnt anything dramatic. You're box idea should work, actually I'm pretty sure it will.
