well, i met a dude who's running a 75 shot on a grand cherokee as his daily driver, all stock except for the trans. The key is your air to fuel ratio, as long as everything is dialed in it's usually safe. Its usually the people who don't know what they're doing that end up being horror stories that everyone hears about. Another thing is that n20 and forced induction (turbo or supercharger) both accomplish the same purpose, to raise you compression, the spray raises the compression, as would a turbo, just in a different way. So either way running n2o on a stock block isn't a lot different from running boost because they both cause more pressure inside the cylinder causing more stress and power.
