I started out on an old 76'ish Yamaha 125 bike. I road that bike all over the flordia swamp lands. In sand, in dirt, took some jumps, learned how to burn out and do doughnuts. I've also ridden an 1100, and a 750. WAY TO MUCH POWER. The CBR600 I have now has a jet kit and is agile as I'd wish it to be.
I'd start out with a 250 and the MSF course... Ride that for atleast 6 months... even get some rain and gravel/sand/dirt riding in. That'l give you a good feel for things. Once that's done, then you should be able to step up to a 600... But beware, 600's have a lot more juice. I've almost lost the bike several times because of how quick it takes off.
