Sorry if this sounds silly, but...
Are 'we' talking about a real temp gauge, or a factory gauge?
The fan should come on between 190° to 200°F. It should shut off at 182° to 188°F.

holy shit bdc where have you been?I'm here every day -- several times a day! I've just been lurking -- waiting to see where all this goes. Let's just call it a long-term experiment, of sorts!
Anyway, Honda designs their temp gauges in such a way as to NOT alarm ppl. If ppl really knew what was going on in the background, it would drive them nuts! Accordingly, Honda OEM temp gauges go to roughly 1/2 way up the scale (or a little over), and they sit there 99.9% of the time -- even though the ACTUAL temps are all over the place. If you see a factory gauge go above or below this position, that's the time to worry! You can bet you have serious problems!
Personally, Jorelinio, since you have a real temp gauge, I wouldn't worry about it too much. That's why Honda makes phony temp gauges -- to save ppl anguish!

I would stil monitor everything closely (all hoses, coolant level/color(oil?)) just incase its not normal. if you really want to be safe, pull the thermostat, and replace(if its been in there a while, this may be a key sign to check and replace, sometimes the spring sticks(and sometimes welds itself open/shut) depending on where the spring was damaged) and could cause failure.)
